Spicy Bean Chili

This might be slightly out of season now but while it has been particularly cold I love having a warm hearty meal, at the same time I am trying to make a couple of meat-free meals a week so this has definitely been added to the menu.

The Recipe:

Ingredients:

  • Chopped Onions (100g)
  • Chopped Garlic (10g)
  • Chopped Mixed Peppers (100g)
  • Tinned Chopped Tomatoes (260g)
  • Kidney Beans (240g)
  • Baked Beans (200g)
  • Mild Chili Powder (1/2 tsp)
  • Cajun spices (1 tsp)
  • Tomato Puree (1 tbsp)
  • Tomato Ketchup (1 tbsp)
  • Natural Yoghurt

Method:

  1. Fry onion and garlic in a saucepan until softened.

  2. Add mixed peppers.

  3. Mix in chopped tomatoes, kidney beans and baked beans.

  4. Stir in spices (add more or less depending on your preference – taste as you go).

  5. Mix in tomato puree and ketchup.

  6. Leave to simmer

  7. Serve with natural yoghurt (if it’s particularly spicy).
