This might be slightly out of season now but while it has been particularly cold I love having a warm hearty meal, at the same time I am trying to make a couple of meat-free meals a week so this has definitely been added to the menu.
- Chopped Onions (100g)
- Chopped Garlic (10g)
- Chopped Mixed Peppers (100g)
- Tinned Chopped Tomatoes (260g)
- Kidney Beans (240g)
- Baked Beans (200g)
- Mild Chili Powder (1/2 tsp)
- Cajun spices (1 tsp)
- Tomato Puree (1 tbsp)
- Tomato Ketchup (1 tbsp)
- Natural Yoghurt
Fry onion and garlic in a saucepan until softened.
Add mixed peppers.
Mix in chopped tomatoes, kidney beans and baked beans.
Stir in spices (add more or less depending on your preference – taste as you go).
Mix in tomato puree and ketchup.
Leave to simmer
Serve with natural yoghurt (if it’s particularly spicy).
