It is not an over exaggeration to say that this is the best dip ever! And every time we make it, it always go down so well!
It’s something a bit different and is great for entertaining (however, I could eat the whole thing to myself). Although it requires a fair bit of effort it is 100% worth it!
- 2 Tins of Kidney Beans
- 2 Avocados
- 1 Clove of Garlic
- 1 Small Chilli (Chopped Finely)
- 1/2 Pint Sour Cream
- 1 Packet Taco Seasoning
- 100g Grated Cheese
- 4 Tomatoes
- 1 Tin of Mixed Olives in Brine
- 1 Bunch of Spring Onions
- Lemon Juice
Mash the kidney beans with some of the water from the tins (you can use a food processor if you have one). Then spread the paste around the base of your serving dish.
Mash the avocado, garlic, chilli and lemon juice together and then layer on top of the kidney beans.
Mix the taco seasoning and sour cream, then add to the dish.
Grate the cheese and sprinkle on top.
De-seed the tomatoes and chop finely, then sprinkle over the cheese.
Finely chop the olives & spring onions, then add on top.
Serve with tortilla chips!
