Happy Pancake Day! Not that you need an excuse for pancakes but today is definitely the day to go all out. Here’s a super easy recipe and some delicious toppings to go with it.
Depending on the size of your frying pan this recipe can make between 8-12 pancakes.
- 200g Plain Flour
- 4 Eggs
- 600ml Milk
- Oil (for the pan)
- Milk & White Chocolate (melted)
- Icing Sugar
Whisk together the flour, eggs and milk until it creates a smooth batter.
Heat a frying pan on a medium heat with a drizzle of oil.
Once the pan is fully heated ladle in the pancake mix until it covers the surface of the pan (approximately 1 and a half to 2 ladles full).
Use a spatula or fish slice to loosen the pancake from the pan and check how much it is cooked underneath.
Once the bottom side is cooked to your liking you can flip the pancake over. If like me you are not particularly confident flipping the pancake then use a fish slice to scoop under the pancake and then flip it over (less chance of it getting all crumpled together).
Once the bottom side is cooked fully you can then serve, or if you want to serve all your pancakes together then put it on a plate and leave it to keep warm in the oven.
For your pancake toppings, rinse and chop the strawberries and melt the chocolate until it is a spoonable consistency.
Assemble your pancakes how you like – mine were with strawberries and lots of chocolate, but I also like a simple lemon juice and sugar.
