It’s a super easy mix to add to lots of meals, I love Mexican food and I’m really keen to keep trying new recipes.
I use this on top of salads, fajitas and burritos but you can add it to whatever you want, I find it adds a nice texture and flavour.
The great thing with this recipe as well is that if you have leftovers you can blend it into a salsa dip (adding more tomatoes).
- 1/2 Red Onion
- 7 Baby Plum Tomatoes
- 1/4 Cucumber
- Lemon Juice
- Jalapeños (optional)
Chop all of your ingredients up into small pieces and mix together.
- Pour lemon juice on top to help it last longer and for flavour.
- For some spice add chopped jalapeños (when I’m making it for a group with different tastes I tend to leave the jalapeños out).
